One of the best things served at La La’s Grill is the chimichurri sauce. I could eat bowls & bowls of that delicious sauce with bread. I have been wanting to try making the sauce at home and decided to cook myself a simple dinner: steak with chimichurri sauce. I like to season my steak with some olive oil, salt & pepper. Then I sear each side in an oven proof pan with melted butter and stick in the oven to finish cooking for about 7 min in 350 degrees.
I’ve seen on cooking shows that you are supposed to cover meat with foil & let the meat rest but I was too hungry and couldn’t wait. I sliced that steak right away and topped it with this yummy chimichurri sauce. This meal is perfect for one– you can also make any side dish to go with it– a salad, roasted potatoes or veggies. I was pretty content with just the meat & sauce

•1 cup firmly packed fresh flat-leaf parsley, trimmed of thick stems
•3-4 garlic cloves
•2 Tbsps fresh oregano leaves (can sub 2 teaspoons dried oregano)
•1/2 cup olive oil
•2 Tbsp red or white wine vinegar
•1 teaspoon sea salt
•1/4 teaspoon freshly ground black pepper
•1/4 teaspoon red pepper flakes
1. Finely chop the parsley, fresh oregano, and garlic (or process in a food processor several pulses). Place in a small bowl.
2. Stir in the olive oil, vinegar, salt, pepper, and red pepper flakes. Adjust seasonings.
Serve immediately or refrigerate. If chilled, return to room temperature before serving. Can keep for a day or two.
